How to Use Ground Sockeye Salmon

With a few considerations, you can cook this fish like any other ground meat. When cooking on the stovetop, add some fat to the pan; sockeye is lean, so adding a little cooking fat will help prevent the protein from sticking. 

You may notice a few superficial differences as the fish cooks. Like other lean ground meats, it doesn’t “brown” as it cooks. Instead, it becomes pale in color and opaque. It also contains more moisture than other ground meats plus albumin — a white, tasteless protein that seeps out of the salmon as it cooks. 

You should use this product within three months. If left in the freezer much longer than that, ice crystals and other discoloration may form on the meat’s surface. Freezer burn is perfectly safe.

You must thaw this cut of salmon in the refrigerator. To thaw: 

  1. Remove the frozen block from its packaging.

  2. Place it in a bowl or container and cover tightly.

  3. Defrost for 10 to 12 hours in the refrigerator or until fully thawed. 

Use the thawed fish within two days in any number of recipes.
