How to Cook Sablefish With Miso Marinade

May 22nd, 2025

Step-by-Step Methods to Cooking Miso Sablefish from Thawed or Frozen

Pre-marinated miso sablefish is a weeknight dinner hero: tender, rich, and full of savory-sweet flavor with barely any prep involved. Whether you’re starting from thawed or frozen, you can get dinner on the table in under 20 minutes using an air fryer, oven, or broiler. Air frying is our preferred cooking method, as it best enhances both the texture and flavor of the fish.

Here’s how to cook sablefish with miso marinade to flaky perfection, whether you're air frying, baking, or broiling.

Air Frying Sablefish With Miso Marinade

*PREFERRED METHOD*? It’s fast, convenient, and crisps up the edges of the fillet while keeping the inside buttery and tender. It's also the best option if you're looking to cook the sablefish from frozen.

From Thawed

  1. Preheat air fryer to 400°F.

  2. Generously spray the air fryer basket or tray with cooking spray to prevent sticking.

  3. Place the miso sablefish fillet skin-side down in the basket, drizzling or brushing with any reserved marinade if desired. Discard remaining marinade.

  4. Air fry for 8 to 10 minutes, depending on the thickness of the fillet. It’s ready when the fish flakes easily with a fork and reaches 145°F internal temperature.

  5. Let rest for 1 minute before serving.

From Frozen

  1. No need to thaw — just preheat your air fryer to 400°F.

  2. Spray the basket or tray with cooking spray. Place the frozen fillet skin-side down in the basket, drizzling or brushing with any reserved marinade if desired. Discard remaining marinade.

  3. Cook for 10 to 12 minutes until the fish is opaque, flaky, and reads 145°F inside.

  4. Let rest for 1 minute before serving.

Baking Sablefish With Miso Marinade

Why bake miso sablefish? It’s a classic, hands-off method that evenly roasts the fillet while enhancing the rich umami flavor of the marinade.

From Thawed

  1. Preheat oven to 425°F.

  2. Place fillet skin-side down on a baking sheet lined with parchment paper or prepared with cooking spray. If you’ve reserved extra marinade, drizzle it over the top. Bake for 9 to 11 minutes, depending on thickness. Sablefish is done when it reaches 145°F, flakes easily, and appears opaque.

  3. Let rest briefly before serving.

From Frozen

  1. Preheat oven to 425°F.

  2. Place fillet skin-side down on a baking sheet lined with parchment paper or prepared with cooking spray. Pour any reserved marinade over the fillet.

  3. Bake for 16 to 18 minutes, or until it hits 145°F internally and flakes with a fork.

  4. Rest before serving.

Broiling Sablefish With Miso Marinade

Why broil it? Broiling caramelizes the marinade and crisps the edges in just minutes, delivering bold flavor and a melt-in-your-mouth texture.

From Thawed

  1. Preheat broiler to 500°F (or high).

  2. Prepare a broiler-safe dish with cooking spray, then arrange fillet skin-side down. Discard remaining marinade.

  3. Broil for 5 to 7 minutes, until it flakes easily and reaches 145°F.

  4. Let rest before serving.

From Frozen

  1. Preheat broiler to 500°F (or high).

  2. Prepare a broiler-safe dish with cooking spray, then arrange fillet skin-side down. Discard remaining marinade.

  3. Broil for 10 to 12 minutes, watching closely to prevent burning.

  4. It’s done when the fillet flakes with a fork and reads 145°F inside.
