Lazy Bear Recipe for Hot Honey Sesame Salmon

A Glaze of Sweet Heat for Quick Eats

For this "lazy bear" recipe, we’re drawing inspiration in these early spring weeks (which sometimes feel more like late winter) from the Alaskan bears, just emerging from hibernation, still groggy but ready to eat. 

This recipe for sweet and spicy sesame salmon uses a bottle of hot honey as a readymade glaze for an addictively zingy and incredibly easy preparation of fish. A generous sprinkling of toasted sesame seeds complements this glaze with subtle nuttiness and texture. The glazed fillet is the perfect complement to leftover vegetables, or flaked over salad greens with a little olive oil and lemon juice.

Lazy Bear Recipe for Hot Honey Sesame Salmon

If you don’t have a bottle of hot honey in your pantry, you can mix honey with a vinegary hot sauce (like tabasco or Frank’s RedHot) to taste. Regular sesame seeds can be used instead of toasted sesame seeds; however, you should be able to find toasted sesame seeds at most grocery stores.

Ingredients

  • 1 (6-ounce) fillet sockeye or coho salmon
  • Salt and freshly ground black pepper
  • Roasted sesame oil
  • Hot honey
  • Toasted sesame seeds

Instructions

1. Preheat oven to 375F.

2. Meanwhile, using a clean tea towel or paper towel, pat fillet dry to remove excess moisture. Arrange on a baking sheet or dish, lined with parchment if desired, then season with salt and pepper. Drizzle both sides of fillet with sesame oil.

3. Spoon a thin layer of hot honey over the tops and sides of fillet, using about a tablespoon to ensure coverage. Then, sprinkle generously with sesame seeds. Transfer to oven and set timer for 8 to 10 minutes, depending on thickness of fillet.

4. Sockeye salmon is medium-rare when it has reached an internal temperature of 120F on an instant-read thermometer at its thickest part, or when it flakes easily with a fork. Add a couple more minutes of cook time until salmon has reached desired doneness.

5. Enjoy while hot with a side of vegetables, or flake over a big bowl of salad.


Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food-borne illness, especially if you have a certain medical condition. The FDA recommends an internal temperature of 145°F for cooked fish.
