Ingredients
- 2 (6 oz.) portions Pacific halibut
- 2 cups green beans, trimmed
- 1 pound small potatoes
- Extra-virgin olive oil
- 2 tablespoons garlic, minced
- Salt and freshly ground black pepper
Instructions
1. Preheat oven to 400F. Meanwhile, bring a medium pot of salted water to a boil. Add potatoes and cook until just tender enough to be pierced with a fork, about 15 minutes.
2. Drain potatoes and transfer to a baking sheet. Using a fork or the flat bottom of a mug, smash potatoes to flatten to approximately ½-inch thickness.
3. Add green beans to baking sheet, moving potatoes aside as needed so that all vegetables are in a single layer. Sprinkle green beans with garlic. Generously drizzle potatoes and green beans with oil, then season with salt and pepper. Bake for 10 minutes.
4. Season halibut fillets with salt and pepper, then drizzle both sides with olive oil. Add to baking sheet and cook for 8 to 10 minutes, depending on thickness of fillets. Pacific halibut is medium-done when it has reached an internal temperature of 130F on an instant-read thermometer at its thickest part, or when it can be flaked easily with a fork. If not quite done, allow to cook for a couple minutes more.
5. Transfer to serving plates and enjoy immediately.
