A Quick Garlic Butter Shrimp Pasta for Weeknights

In this comforting recipe for a simple shrimp scampi, shrimp are cooked in a garlicky butter sauce and served over orzo — a simple, delicious weeknight meal. The easy butter garlic sauce is made with eight cloves of garlic, which supercharges the sweet shrimp with flavor. 

Since the ingredient list for this shrimp scampi recipe is limited to a few components, the quality of each ingredient has a chance to truly shine. Choose a good quality extra-virgin olive oil and premium shrimp to really make the meal count. An incredibly sweet variety of wild-caught shrimp, such as sidestriped shrimp from Alaska, is a great option.

Ingredients

  • 2 (8 oz.) packages sidestriped shrimp, shells peeled
  • 1 cup dry orzo
  • 2 cups water
  • 1 tablespoon extra-virgin olive oil
  • 4 tablespoons butter
  • 8 cloves garlic, minced
  • 1 shallot, finely chopped
  • Pinch of chili flakes
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Parsley, finely chopped, for serving

Instructions

1. Bring a medium pot of salted water to a boil. Add orzo and cook according to the package directions. Drain in a colander and toss with a tablespoon of olive oil.

2. Meanwhile, melt the butter in a large skillet over medium heat. Add shallot, garlic, and chili flakes to the skillet and cook for about 2 minutes.

3. Add the shrimp, tossing to coat, then season with salt and pepper. Saute until shrimp are just opaque, about 2 to 3 minutes.

4. Divide orzo evenly among serving bowls, topped with shrimp. Garnish with fresh parsley and serve immediately.
