How Weathervane Scallops Turned My Culinary Expectations Upside Down

Finding Everyday Extravagance in Wild-Caught Alaska Seafood

There was definitely a period of my life when a plate of seared scallops felt like a supreme indulgence, a meal ordered only at the best restaurants or savored on special occasions. They were the kind of food I imagined were served at functions like The Academy Awards.

But, oh, how the tides have turned. Because Weathervane scallops are now the species of seafood that have convinced me single-handedly that any mealtime is the right time for incredible seafood. After a single bite of wild-caught Weathervane scallops from Alaska, I couldn’t help but crave these shellfish as an everyday extravagance. Because, after all, every moment is special. 

Prior to Weathervanes, my reservations for cooking scallops at home were manifold, ranging from not knowing what to look for at seafood markets to not feeling so sure that I could cook them the way I liked. My dream scallop was sweet and buttery, a plump, pillowy morsel crowned with a golden crust, just like scallops that I’d sometimes encountered while dining out. I couldn’t fathom the prospect of such a sublime, decadent experience at home in my kitchen, much less crafted by me, until Arron (my husband and the founder + CEO of Wild Alaskan Company) introduced me to Weathervane scallops. When I understood that a super hot pan, some butter and scallops searing undisturbed in said pan were all that was needed, my mind was blown. Even more so when I understood that the whole thing can happen in less than five minutes.

Today, years after my first bite of Weathervanes, I rarely eat scallops outside of my kitchen — because I’ve since realized that the ones I make at home are better than the ones I can find at any given restaurant. It’s a matter of personal pride to pull off chef-worthy meals, but it’s also a testament to great seafood. Because with seafood this good, it takes very little effort to make an everyday meal a supreme indulgence.
